Endlich! Das lange Osternwochenende ist da! Nur das Wetter ist nicht so begeistert davon. Es regnet, schneit und will gar nicht mehr aufhören. Unser Wochenende besteht nun hauptsächlich aus Backen, Eier färben, gutes Essen  und viel gemütliche Momente zu zweit. Heute morgen begann ich bereits mit dem Eier färben. Ich verwende dazu Spinat und Heidelbeeren. Ich bin gespannt wie die Eier schlussendlich aussehen werden. Nun aber zu meinen Cookies welche ich in der Zwischenzeit gemacht habe. Anstatt Osterhasen zu verschenken, gestalte ich meine Osternester lieber mit etwas Seblstgemachten. Letztes Jahr waren es Cantuccini diese Jahr diese Mandelkekse. Das Rezept dazu fand ich in Martha Stewarts Buch Cookies. Ich werde es euch etwas später natürlich noch anfügen. Nun gehts aber fein Abendessen. Happy Ostern!!

Espresso Amarettis

So these little Espresso Amarettis are amazing with a cup of coffee! (YES!! You HAVE to drink a cup of coffee with these!!) So.. it’s very easy and veeery quick to make them! So bake and try with some milk froth of a Latte Machiatto! *yummiiii* (ya ya.. I know.. i’m a coffee addicted)

Ingredients
– 2 egg whites
– 1 dash of salt
– 150g sugar
– 150g almonds, grated
– 5 teaspoons instant espresso
– 4 tablespoons hazel nuts, chopped
– a lacing amaretti sirup
The Method
1. Preheat your oven to 150°C.
2. Beat the egg whites with the salt until stiff.
3. Add the sugar slowly during beating.
4. Fold in the almonds and the espresso.
5. Put the mixture to a pastry bag and spatter globes to a baking tin with a diametre of 2 cm.
6. Spread with the hazel nuts.
7. Bake for 20min. Cool down. Best before 2-3 weeks in a can.

So.. again.. please enjoy them with a good Latte Macchiatto and dip into the milk frooth! You will LOVE it. 🙂

 

Chocolate Pecan Cookies

So… I made these cute cookies for my grandfather, my family and some friends from work! I looooove cookies! There so easy to make and just perfect to a coffee! (Here in the picture with a Latte Macchiatto! yummi)

The Ingredients
-180 g smooth butter
-300 g brown sugar
-2 tea-spoons vanille sugar
-2 eggs
-350 g flour
-2 tea-spoons cocoa
-1 tea-spoon baking soda
-100 g chopped pecans
-100 g chocolate drops

The Method

Time to prepare: 20 minutes
Time to bake: 15 minutes
1. Preheat the oven.
2. Stir margarine, sugar, vanille sugar & eggs spumy.
3. Mix the flour, cocoa with the baking soda and sieve it over the things from step 2. Add the pecans and chocolate drops. Fold in with the mixture. Mix all things fast. But attention! Just don’t stir it too much! If you do – they will get hard!
4. Make pieces with a teaspoon and put them to a baking tray. Diameter as big as you want them. But attention!! They will rise… so look that you let enough space between them!
5. Flattening them a little bit.
6. Bake them.

Baking: 15 minutes, in the middle, convection oven –> 160° degrees, “normal” oven –> 180° degrees, gas oven –> level 2-3

Chocolate Chip Cookies

They taste awesome and it’s very easy to make! Traditional with a glass of milk or to a good cup of coffee! They’re always welcome!


The Ingredients

– 400 g margarine
– 300 g brown sugar
– 2 eggs
– 1 1/2 pack vanille sugar
– dash salt
– tea spoon baking powder
– dash baking soda
– 450 g flour
– 400 g chocolate drops (or chopped dark chocolate

The Method

1. Stir margarine, sugar, salt creamy.
2. Add the eggs.
3. Add the flour, vanille sugar and baking powder.
4. Add 2/3 of the chocolate drops.
5. Make pieces with a teaspoon and put them to a baking tray. Diameter like 3cm. Attention!! They will rise… so look that you let enough space between them!
6. Flattening them a little bit.
7. Sprinkle the other chocolate drops.
